Baked pork and biscuits

Ok… so you are just gonna have to take my word on this one that it’s super yummy because once again I forgot to take photos. But meal number 3 for the humans from the meat we purchased to make dog food. We sliced off a section of the large pork roast and saved enough to make two nice sized pork chops for us “hooomans” lol.

First: in the instant pot I made some home made cream of mushroom soup. Honestly this is so simple to make I have no idea why people buy the canned stuff. I made it on a whim for this recipe using ingredients I already had in the house. There are tons of online recipes for cream of mushroom soup, but the basic ingredients are a tiny amount of flour, some beef broth, some milk, various spices, butter and if you don’t have fresh mushrooms feel free to use a jar of canned ones (like I did, which I get Big jars for $1 at the dollar store to keep on hand for mushroom emergencies lol). Seriously easy to make and takes just a few minutes to throw together. I’m guessing you already have the ingredients in your pantry!

Next I took my handy dandy new (to me) apple corer and slicer that also makes awesome thin cut spiral potato slices! I found my slicer at the local thrift store (SCORE!!! yAY!) for $5 and just love it! I placed the potato slices in the bottom of my super handy vintage Corning ware dish and then dumped the mushroom soup on top. After slicing the pork into two pieces about as thick as a thick cut pork chop I laid those on top and sprinkled on some white pepper and smoked salt (seriously… have you not bought smoked salt yet after all the times I have referenced it so far? If you have… isn’t it just awesome?!?!?!)

Then I covered my dish with aluminum foil and baked for one hour at 350 degrees checking to make sure the meat was done with a meat thermometer before serving.

Next I made some yummy biscuits… again there are tons of basic recipes online for biscuits but I use flour, butter, baking power, salt, and the secret ingredient: whatever recipe you decide to use try substituting the milk or water (whatever liquid it calls for) with a strong mixture of warm water and powdered milk! I don’t know why but this seems to make the best biscuits ever! Also butter is a must so don’t shortcut and try to use anything else (shortening, margarine, oil etc) or your biscuits won’t turn out very yummy. I bake mine in the electric toaster oven on 400 degrees for about 15 minutes but just keep an eye on it because each electric toaster oven works different.

Again, sorry for forgetting the photos but I was also weaving on the loom and watching a good mystery movie so… it was a busy day lol. But hubby scarfed his meal down super fast so I’m guessing he liked it lol and he’s washing up dishes without complaining so I guess I did good! πŸ™‚
