Easy homemade salsa that goes good on just about everything (even eggs)

So I’m posting this really for my adult son who calls me about once a month and asks “what do I buy to put in that salsa again?” “What are those green things called again?” And for all the other people who have asked me the same questions lol

This stuff is fabulous with nachos but don’t stop there. Put it on your tacos too! But wait there’s more! Put it on sandwiches, on top of eggs… on top of anything that tomatoes complement really. We can go thru a huge bowl of this in a matter of minutes. Shhhh don’t tell anyone that it’s healthy lol

So here are the ingredients:

2-4 red tomatoes diced

2-6 tomatillos diced (more on that later, notice the spelling. This is not a tomato but a cousin of the tomato)

Cilantro if you must (I don’t like it and never put it in this recipe, but feel free to add some if you must)

1/2 to a whole sweet onion (depending on how much you love onions)

About a 1/2 teaspoon of garlic powder ( Not garlic salt!)

About 1 teaspoon (to taste) of Morton’s nature’s seasons. Let it sit a few minutes before adding more because as it sits the flavors start to enhance.

Toss all that in a bowl, give it a stir and serve.

Now back to the tomatillos. You will find them in the grocery store produce section and they are honestly the key ingredient. So go to a regular grocery store (not a Wally World because I can tell you I have never found them at Wally World) … go to a store with a nice produce section (I always find them at Kroger’s or Albertsons … stores like that). They will be there most likely in a small basket near the weird produce nobody knows how to use lol. Google them to see what they look like.

They are basically a small green looking tomato covered by a leafy green or brownish green wrapping that is often crispy like paper. Peel the leaf part back and inspect the tomatillo before buying. It should look like a nice green tomato inside that leaf wrapper. It should not be wrinkled or moldy etc. to prepare the tomatillo just strip off the leafy outer covering and rinse the green tomato and then dice the green tomato part like you would a regular tomato. I’m going to call it a green tomato here to give a visual for those who have never used them before but it is not a green tomato. It is a cousin of a tomato… but tastes different and the inside is different too. The inside looks spongy with tiny little seeds. If you are still confused: write down the word “tomatillo” and take it to the person working in the produce isle. They will help you find it 🙂

Tomatillos give a nice fresh lemony flavor, they don’t taste like green tomatoes, so no a green tomato won’t work the same for flavoring. In a pinch if you absolutely can not find tomatillos you can substitute a tiny splash of lemon juice, but be warned it won’t taste near as good. So don’t be tempted to cheat on this one and go out and get some nice tomatillos. You won’t be sorry.

So there you have it son… now quit asking me what those green things are called!!!… I’m busy playing with Conestoga Chuck! Lol

Next time I make a batch I will add a photo but for now just assume it looks like regular salsa (minus the yucky added canned tomato sauce and all those nasty preservatives etc lol) but oh so much yummier!!!
