Instant pot, homemade gourmet mac and cheese: no more time to make than a box mix folks!

Ok so this has got to be the yummiest Mac and cheese ever! It has two secret ingredients (shhhh don’t tell anyone!) which are powdered mustard and evaporated goats milk! It’s also an easy way to use up any stray bits of cheese you have in the fridge lol.

Take a 1lb box of elbow noodles and add 4 cups water, 1 teaspoon mustard powder, 1 teaspoon salt (smoked salt is even better!) and some fresh ground white pepper to taste. Cook on high manual for 4 minutes. No need to drain your noodles if it worked properly 🙂

Now take all that cheese you have in the fridge and grate some up. A little bit of everything. Always include some cheddar tho, but Swiss, Parmesan… anything really… works great! About 2-3 cups worth depending on how cheesy you like it. Dump the cheese and one can ( 12oz) of evaporated goats milk (look in the baking isle is where I usually find it) and give it a stir till the cheese is melted… voila ready to serve!

If you want to get fancy put some crumbled bacon on top 🙂

This is gourmet Mac and cheese folks! It’s even better if you let it sit for a bit before you serve it. It has a nice tangy flavor that you just can’t get with cow milk or without the mustard powder. Once you try it you won’t go back to those box mixes and this is way healthier! It doesn’t take any more time than making the box mix kind either. Not to mention I always get compliments on this when I make it! It’s excellent fall comfort food. This time I used cheddar, Swiss and Parmesan cheese to make mine… so it’s probably not as yellow as you may like it, but it is super cheesy and yummy!:

I always have different types of cheese in the fridge. We love cheese in this house! The other ingredients are easily kept in the pantry since they are non perishable and pretty much used for other recipes anyway, so I always have those as well. So I can easily whip this recipe up in a matter of minutes! It’s filling and pretty much a meal in and of itself… but also makes and excellent quick and easy side dish.

It’s also super easy to tote that instant pot and the ingredients to a holiday office party and have a fresh cooked hot side dish to share for pot luck in a matter of minutes. So don’t forget this makes an excellent party food that everyone will enjoy and they all will want to know what your secret ingredient is lol… but shhhh don’t tell them!!!! Lol then it wouldn’t be a secret any more!
