We try to eat healthy here at Conestoga chuck’s house. But buying commercial breakfast cereal is very expensive especially if you buy the “healthy” kind. Fortunately granola style breakfast cereal is very easy to make at home and sooooooo much more economical than buying those tiny boxes at the store that maybe have 3 bowls worth of cereal in them and then a garbage can full of cereal boxes and bags afterwards! What a waste of money and a ton of trash for the landfill! So we make our own yummy breakfast cereal, and this is a fabulous way to start your morning if you are short on time… or too busy cooking for your dog… to make yourself a hot breakfast lol.
So let’s get started!
4 cups bob’s red mill brand 5 grain rolled hot cereal (I love this brand and use a lot of their products!)

1/2 cup wheat germ
1/4 cup unsalted sunflower seeds
1 tsp cinnamon
1/2 cup chopped walnuts
(I usually place the whole nuts in a bag and cover with a dish towel and then smack them with the meat tenderizer hammer to “chop” them lol)

1/2cup coconut sugar
1/3 cup coconut oil
5 TBLS maple syrup
1/2 cup water
2 teaspoons vanilla
1-2 cups dried mixed berries (cranberries, blueberries and cherries are what I use) save these for last! They go in after the granola has baked and cooled.
Place all the dry ingredients (except the dried berries those go in after baking) in your awesome corningware lasagna pan and give it a stir.

Place all your wet ingredients in another bowl and give them a stir and then pour them over the dry ingredients (give it another stir)

Bake on 350 for about an hour. Check every 15 minutes and give it another stir… and when the oats turn a golden brown it’s ready to take out of the oven. You will know it’s done when you stir it and it feels roasted and not moist.

I store my breakfast cereal in a 1/2 gallon sized canning jar π after it cools. (Never put anything hot in a cold glass jar because you will break the jar! Wait till your granola completely cools before putting it in a storage container of any type because of potential moisture buildup from the granola cooling)
Healthy eating can be cost effective! This makes a huge batch of granola that keeps well, tastes great, and costs less than $10 to make by my calculations…
Conestoga Chuck and lil bit get home cooked meals so I figure some yummy granola for the humans is well deserved.
